Cheer up, Mom and Dad! I know the holidays can make you tired and grumpy, but it is Christmas, and this family needs some Christmas spirit! Yay! Sometimes we get busy and forget that this is a magic time, when hopes and wishes come true. Gee, sometimes even I worry about silly things like what toys Santa will bring me. But that's not what Christmas is about! It's about love and joy and being together! So let's go outside and have a snowball fight and share some holiday togetherness with each other and all of those we love! Hooray!
Actually Timmy, what this family needs is a gourmet holiday cheeseball, made of finest goat cheese and rolled in chives. It is guaranteed to brighten any family's Christmas, and it makes a wonderful change from the ho-hum cheese and cracker platters that grace so many holiday tables at this time of year. If you can find organic cheese at your local grocery, be sure that you buy it! It has a cleaner, more distinct flavor, and is better for you! Serve your cheeseball with thinly sliced English cucumbers and beet chips. Garnish with fresh parsley, if desired. Serves 6-8.
