Sophisticated Club Sandwich

from Good Housekeeping's Breads & Sandwiches Book

16 white-bread slices
Soft butter or margarine
4 process Cheddar-cheese slices
4 thin baked-ham slices
4 large canned pineapple slices, drained
1/2 cup peanut butter
1/2 cup flaked coconut
12 crisp bacon slices
4 thin tomato slices
4 1/4"-thick avocado slices, halved

  1. Toast bread; spread with soft butter.

  2. For each of 4 sandwiches, cover 1 toast slice with 1 cheese, 1 ham, then 1 pineapple slice. Top with second toast slice; spread with 2 tablesp. peanut butter; spread generously with coconut.

  3. Top coconut with third toast slice; on it, arrange 3 bacon slices, then 1 tomato and 1 avocado slice. Top all with 1 toast slice, buttered side down.

  4. Secure with picks; cut diagonally in halves.

Makes 4 servings
